One day I had plenty of free time and I was starving, bored and feeling creative. My jamaican boo left some curry powder at my house and I figured why not take advantage. So I pulled out the cutting board, deveined the shrimp, and began to heat my handy crockpot.

Ingredients-
Shrimp
Garlic
Ginger
Onions
Orange/Red Pepper
Thyme
Tomatoes
Curry Powder
Salt & Pepper
Olive Oil
Fresh Pineapples
Cayenne Pepper
Rice

First you heat you crockpot/deep pan to a high heat and begin to scorch your orange peppers, so that they retain their crisp snap and the skin emits that smokey pepper aroma and flavor, do this for only about 2 mins.

Then turn the heat down to medium and begin to brown your onions, tomatoes, and garlic. Once the onions become translucent add your shrimp until they become pink. Finally turn the heat off and add your accents to the dish- mine were ginger and thyme, but you may prefer a different herbs or spices.

While the flavors are making sweet love to one another, begin to cut your fresh pineapple into small chunks. Don’t know how to cut a pineapple, go here. Then lightly sprinkle them with cayenne pepper.

This was a quick, but q somewhat eloquent meal. At the time I didn’t have anyone to share it with. But you can tell by the likes and comments I received on Instagram that a few people felt left out. Anyway, try this curry shrimp sexipe out and tell me what you think.
